Herbed Cauliflower Pizza

Topped with turkey pepperoni -- tasty and satisfying!

INGREDIENTS

·       1 head of cauliflower, trimmed and roughly chopped

·       1 Tbsp coconut flour

·       1 tsp dried oregano

·       1 tsp dried basil

·       1/2 tsp salt

·       2 whole eggs

INSTRUCTIONS

1.    Heat oven to 400. Place a piece of parchment paper over a baking tray

2.    Chop cauliflower into small pieces and place in food processor. Pulse cauliflower, until cauliflower is the consistency of rice.

3.   Place processed cauliflower onto a skillet to cook for 5-8 minutes (wait for riced cauliflower to soften)

4.    Place cooked cauliflower on a cheese cloth and squeeze out excess water. (*muy importante  )

5.    In a mixing bowl, combine riced cauliflower, coconut flour, oregano, basil, salt, and eggs.

6.   Form a ball with the “dough” and place onto baking sheet then flatten and form circular shape (about 1/4″ thick). Make sure it’s not too thick or too thin

7.    Bake for 12 minutes, or until crust is golden brown and then flip crust and bake for another 7 minutes.

8.    Remove from oven and allow to cool for 5-10 minutes.

9.    Add toppings of choice (Tomato Sauce,Cheese, turkey pepperoni, dairy free cheese) and place back in oven for 2 minutes.
